When we made these tartlets for the photography, we couldn't stop eating them!
Crisp, light pastry with such a luscious filling – and also lovely as a first course at a supper party. Vegetarians may like to know that there is a 'parmesan style' hard cheese available from Bookham & Harrison Farms Ltd.

Hello Lindsey I would like to make Delia’s Caramelised Onion Tartlets with Goat’s Cheese and Thyme for a buffet. Could you please tell me how far in advance of the get-together I can make them? Thanks very much. Jan
Answered by Lindsey: Hello jan, I’d make and freeze the pastry cases ahead. Make and mix the filling the day before. Fill and bake up to 6 hours before the event. Kind regards Lindsey
Hi Lindsey - I'm planning to make Delia's Caramelised Onion and Goats Cheese Tartlets for a buffet, but I'm finding it impossible to find a patty tin with the correct size holes/cups to the equipment specification at the end of the recipe. I've tried Amazon and Lakeland but they're either much too shallow, or huge! I imagine you can't recommend an actual make, but can you possibly point me in the right direction? I don't think my husband can cope with any more "wrong" tins arriving...Thank you for being there, and thank you in advance for any help you can give. Best wishes, Ro Johnson
Answered by Lindsey: Hello RO. I think this one looks about right… https://www.hartsofstur.com/master-class-non-stick-twelve-hole-shallow-baking-pan-32-x-24cm-kcmchb29.html Kind regards Lindsey
