This is a very famous recipe from Florida, where a certain special variety of limes called Key limes are used.
Their season is short and there aren't enough grown to export; however, the pie tastes just as good with other varieties of lime in this authentic American recipe.

Hi Lindsey Can I freeze the Key Lime Pie after making/baking it? We are entertaining on the 10th and I'd like to make the pie ahead of time? If so, please advise defrost instructions in time for serving. Thank you!
Answered by Lindsey: Hello, Yes, you can. Cool completely and open-freeze to prevent damage, until solid. Wrap in foil or a polythene freezer bag with cardboard support to prevent damage, or a rigid container, for up to 2 months. Defrost overnight in the fridge. Decorate and serve. Kind regards Lindsey
Hello Lindsey my question is re Key Lime Pie. My Daughter in Law has just brought me a bag of key limes from America and I wondered if I needed to adjust Delia's recipe in any way as the real key limes are more bitter than the variety we can source here in thed UK. Answered by Lindsey: Hello Eileen, A very Happy New Year to you too. I wouldn’t make any adjustment to the Key Lime Pie recipe when using Key limes and yes you can make lime curd with them. I think the Happy Christmas special was filmed in 2009 so I think that would be Freddie. Kind regards Lindsey
Dear Lindsey I have 2 questions 1. I have been making the key lime pie for years but cannot source grape nuts. Can you suggest an alternative please ? 2. I would like to make the chocolate marscapone cheese from Delia Chocolate Collection but I cannot get the 8% fat fromage frais. Again could you suggest an alternative, please Many thanks Deirdre
Answered by Lindsey: Hello Deirdre, You can get Grape Nuts in the cereal aisle at Tesco’s, Sainsbury’s or Waitrose. 8% Fromage Frais is available in Waitrose – either Waitrose own brand or Rians La Faisselle brand (I’ve seen Rians on French Click as well). Or if you cannot get anything but the fat-free fromage frais (which seems to be available just about everywhere) - I would use 150ml of the fat-free combined with 50ml extra thick double cream or full-fat crème fraîche.
