Hello Lindsey my question is re Key Lime Pie. My Daughter in Law has just brought me a bag of key limes from America and I wondered if I needed to adjust Delia's recipe in any way as the real key limes are more bitter than the variety we can source here in thed UK. Also would they make Lime curd?
Many thanks and happy, healthy 2021.
Eileen
PS Over the festive period, I came upon a Christmas video of Delia's (I think 2019) and there was THE most gorgeous cat. Was this the "very briefly" Ivo? as if my memory serves me right, Freddie passed away in 2017,

Hello Eileen,
A very Happy New Year to you too.
I wouldn’t make any adjustment to the Key Lime Pie recipe when using Key limes and yes you can make lime curd with them.
I think the Happy Christmas special was filmed in 2009 so I think that would be Freddie.
Kind regards
Lindsey
Thanks Lindsey. I am all ready to go with the lime curd, but I can only find a lemon curd recipe in Delia's list and the measurement used is not in liquid form. These key limes are quite small and it took a large bag of key limes to produce the 150 ml juice required for the Key Lime Pie. Delia's lemon curd recipe calls for the zest and juice of 4 large juicy lemons and if I could adapt this for my key limes I would be grateful if you could suggest how many key limes would be the equivalent to the 4 large juicy lemons in Delia's lemon curd recipe?
Thank you. Eileen
I would do 200 - 220mls for 4 large juicy lemons.
