I've made Delia's traditional Dundee cake but can't find a 18cm tin.ive been using a 20cm round cake tin instead but with bad results.the top over browns and the dried fruits near the edge of the cake taste bitter.the top also cracks as well.is there any suggestions that you can give to help me remedy this?

Ideally, I’d get the right size tin but if you’d prefer not to do that it would be better to make 1 ½ times the recipe if you’re using a 20cm tin.
It will take longer to bake (about 45 minutes more) so it’s a good idea to protect it in the oven in the same way as a rich fruit cake, by tying several layers of brown or newspaper around the outside of the tin and I’d cover it loosely with foil after 1 ¾ hours.
Delia’s oven temperatures are for conventional heat. If you only have a fan setting you’ll need to reduce the given temperature by 20 degrees.
