When you say to 'open freeze' a recipe, does that literally mean you just put it uncovered in the freezer until frozen?

To open freeze you need to spread out the pieces of food on a tray (this can be an oven tray) with a reusable liner or some baking parchment, making sure the pieces are not touching. You need to freeze the food as quickly as possible, and then as soon as it’s frozen solid transfer it to a freezer bag or container.
However, if you busy or need to leave it overnight, I would pop the whole tray in a freezer bag (one that can be reused again) to avoid any damage to the surface of the food. Then transfer the pieces to a bag or container when you can.
