Hi, I made the fruit scones today and although I measured them for height 3 cm and think I followed the recipe to the letter, they didn't rise. Any ideas why this would happen.
Many thanks
Jean

Hello Jean,
Assuming your self-rising flour is in date, it’s most likely that the mixture was too dry. Delia uses 3 – 4 tablespoons of milk.
Delia always uses an old fashioned tablespoon (which is 20ml or the equivalent of 2 dessertspoons).
So for this rich fruit scones that’s between 60 and 80ml.
It can also happen when the mixture is over worked.
Kind regards
Lindsey
