Cooking the turkey in a fan oven

Dear Lindsey
I’ve always followed Delia's recipe for roast turkey, but now have a Neff fan oven and am nervous that all the timings will be all over the place - the recipe book that came with it doesn’t contain turkey - is it possible to have new timings for a fan oven please?

Hello Ellie,

We do not have any tested results using fan ovens.

You can either use a fan setting and reduce all of the given temperatures by 20 degrees or use a top and bottom conventional heat setting and follow Delia’s guidelines.

If you choose to use the fan setting I would cautiously take 30 minutes off the cooking time for a 14lb bird (weight without the stuffing) for the middle part (i.e. the longest) of the cooking time.

As you are going to test it after cooking without the foil when its browed, you can always give it a bit longer and 180C fan if the juices do not run clear.
