Marmalade didn't set!
Hi Lindsay. I followed Delia's recipe for seville marmalade and made one batch very successfully as usual. However, the second batch was not successful and has not set properly. I did not use jam suger but never have as i dont like the strong set!! I have put it all in jars etc but it is too liquidy and not fit for use. Can I do anything to salvage it.....reboil it and use jam suger or any tips? Really need your help. I noticed that some of the oranges were larger than normal and possibly did not contain enough pectin. Would apprecaite your help as I hate to have to bin this batch after soo much work.

We do not use Jam Sugar either. We use preserving sugar. The advantage of preserving sugar is that the crystals are larger. They dissolve slowly, are less likely to burn and they are a little easier to know when they have completely dissolved, but it doesn’t contain pectin.
However, you can make marmalade with granulated sugar which we do often.
As you have made a successful batch I doubt that it is because you didn’t squeeze the muslin bag sufficiently so it’s likely that it wasn’t boiled enough. The size of the oranges shouldn’t make any difference.
You can re-boil it. You will need to empty the marmalade into the pan and add the juice of a lemon. Slowly bring it back to the boil when the boil is really rapid I would give it 5 minutes. Then test it on a cold saucer.
You will also need to sterilise jars and lids again.
