Freezing Lemon Layer Cake and Chocolate Brownies

I am planning to make a few home-made cakes for a funeral wake in memory of my fiancee who passed away three weeks ago and loved Delia's Iced Lemon Layer Cake and her Four Nut Chocolate Brownies (both in Delia's Winter Collection).
Can I just check that both of these cakes can be frozen once made? Or should the lemon cake be frozen before being finished?

In answer to your question…

Yes these cakes can be frozen and yes I completely agree with you about freezing the lemon sponges and then finishing them on the day.

We have updated versions of both of these recipes that Delia included in her new cakes book if you would like to have a look. The originals still work but in particular, the brownies (which can be made with any nuts) really are extra special (as long as they are not overcooked).
