Adapting Delia's curry recipe
I’ve always loved Delia’s Sri Lankan Lamb Curry and I’ve made it many, many times over the years. With all the lockdown craziness, I wasn’t able to get any lamb recently, but I really wanted to make the curry. Instead, I used pork tenderloin that I had on hand in the recipe, without changing anything else and.... it was fabulous! In fact, I might honestly say it was better than lamb. Not nearly as greasy and the pork/coconut combo was fantastic. Think I’ll probably be making it this was always from now on. I really didn’t think Delia’s lamb curry could be improved upon, but I found a way!
