Method

You'll need to start off by making the Almost Mayonnaise (recipe below).

Then chill it for a couple of hours in the fridge.  All you do now is mix all the remaining ingredients into the mayonnaise, whisk the whole lot together until well blended and sprinkle with the cayenne pepper.

2 tablespoons Almost Mayonnaise (see recipe below)
2 tablespoons tomato-and-chilli relish
a pinch of cayenne pepper
salt and freshly milled black pepper
