Tough marmalade peel.
Asked on 22 Nov 2021 by Barbara36
Unfortunately the peel in my Seville Orange Marmalade was not softened enough before I went the full hog and finished the process! How can I rescue it as the peel is just too hard.
Been making ~Delia's" marmalade for decades and must have had a senior moment!
Help please
Hello,
It’s not possible to soften the peel after it’s been cooked with the sugar but you might be able to improve it.
Spoon all the contents of the jars into a large pan.
Wash and sterilise the jars, and wash & dry the lids.
Heat the marmalade gently until it has all melted.
Next strain the marmalade through a colander over a large bowl.
Put the peel into the bowl of a food processor and chop finely (you can do this on a clean chopping board if need be). Then check it is pleasant to eat. If it isn’t just discard the peel and have strained marmalade, but if it’s ok return it to the saucepan with the strained marmalade and heat until it comes up to simmering point.
Leave to settle for 20 minutes then re-pot and cover with fresh waxed paper and the lids.
Best wishes
Lindsey
