

I have always loved Delia’s Creole Christmas cake but since becoming vegan I decided to ‘veganise’ the recipe and substitute the 5 eggs. I used 125gm unsweetened apple purée for 2 of the eggs. 1 tbsp ground chia seeds with 3 tbsp water for another egg. Then 1 tsp bicarbonate of soda with 1 tbsp Apple Cider Vinegar. Finally 60 ml plant based milk mixed with 1 tsp lemon juice left to curdle for 10 mins. I know you don’t test alternative methods but thought you might like to know it was incredibly successful and tastes just like the normal cake. The texture is also perfect and cuts like a dream. I know Delia doesn’t, but I marzipan and ice mine too. I love all Delia’s recipes but thought you might find it interesting to know that I can still use them. Merry Christmas to you all. X
