Hi Lindsay;
We live in Vancouver, BC. (ex-Brits, and visit every year until Covid-19 stopped us this year) And I try to bake an English Christmas cake & sometimes Puddings.
However this year we are unable to buy Glace Pineapple ( nor Marmite !) and wonder what I can use instead. I am told that fresh or canned pineapple will make the cake go mouldy quickly.
What would you suggest please ?
My husband bought me your first Cook Book when we emigrated !

Hello Pamela,
You could use dried pineapple…

Or increase other fruits if you can’t get that.
Kind regards
