

Dear Lindsey, I am an avid fan of Delia recipes. Unfortunately last night I had my first failure. Steamed Treacle Sponge Pudding - rose like crazy - broke through the pleated greaseproof and foil - lifted the lid off my steamer during cooking - but then collapsed into a sticky soup on the serving plate. I followed the recipe on the internet totally. Is it correct with self-raising flour and baking powder? That is the only thing I can think of. I look forward to hearing from you. Regards

I’m sorry to hear that your Steamed Treacle Sponge Pudding didn’t work.
I’ve double checked the online version we have on this site v Delia’s original published version and they are the same.
175g self-raising flour and 1 rounded teaspoon baking powder is accurate. It definitely sounds like your steamer isn’t deep enough, but also, I would double check the amount of each ingredient you used and the capacity of your pudding basin which should be 1200ml.
