We are very happy to report that we have tested all the recipes in Delia’s Cakes Book using gluten-free ingredients. And we were impressed with more than 90% of the results.
Sometimes the cakes were a little more crumbly, but most of the time there is very little difference, particularly with muffins, fruit cakes and biscuits.
Sometimes a spot more liquid was needed in dryer mixtures.

The gluten-free ingredients we used were…
White four, plain and self-raising
Baking powder
Cornflour
Cereals
Porridge oats (ground in a mini-chopper to replace oatmeal)
Polenta
The following cakes Delia’s Cakes book do not have any gluten…
Squidgy Chocolate Cake
Moist Chocolate & Rum Squares
Chocolate Soufflé Cake with Armagnac Prunes & Crème Fraiche Sauce
Apricot Hazelnut Meringue Cake
You will find lots of ‘specifically’ gluten free cakes from other sources. Developed without gluten so they use gluten free ingredients and frequently ‘xanthan gum’ (or similar) which replaces the ‘glue’ found in gluten that helps hold everything together! We didn’t use this in the recipes we tested as that would be a whole new book but as I said we were pleased with over 90% of the results using simple swaps.
