

Hello Lindsey. I'm making Delia's Roasted Meditterranean Vegetable Lasagne and please could you clarify if the grated mozzarella referred to is the hard cheese variety or the white Italian in liquid and (other than a green salad) what sides could you suggest..

Hello Eileen,
When this recipe was developed wet mozzarella would have been a rare find in Britain. This recipe works with either grated block or diced wet mozzarella.
Green salad sounds perfect. With Sherry vinegar and balsamic vinaigrette, even better.
