Hello,
We often make this recipe and it doesn’t need to be bound with an egg.
It’s important that the cakes are made with both the brown and white crabmeat and they are pressed firmly together before being left to chill for a minimum of 2 hours.
Then the frying pan must be very hot before you slide the chilled cakes gently into the hot oil and cook them for at least 3 minutes before using the spatula to turn them over gently and cook on the other side.
