

Hi Lindsay I’m baking a few of Delia’s Traditional Christmas Cake. I’ve had great success in the past.
This year I’d like to bake a rectangle cake 21 x 24, a half each for two single people, do I need to make any alterations re ingredients and cooking time?
I have loose bottom cake tins but the rectangle one has a fixed bottom. While it will divide more easily. will it release as easily as it would from the round tin?

Hello Kevin,
I’ve not made Delia’s Traditional Christmas Cake in this size but my guess is a 7-egg mixture.
I would make sure it’s well protected around the outside and a double layer of parchment over the top (not touching the surface of the cake mixture).
I would have a peek at 4 hours and then check it every 15 - 20 minutes.
As it doesn’t have a loose base, let it cool in the tin so it’s firm enough to turn out.
