I would like to make my christmas cake in my 2lb loaf tin, as I do not want a large cake. How would the quantities change from the usual Rich Fruit Cake recipe, and also the cooking time?

Hello,
What is the liquid capacity of your tin?
Kind regards
Lindsey

It is a silicone loaf tin, of 1 litre capacity

Hello,
I would suggest half the recipe.
As always, protect the outside of the tin and cover the top with parchment (so that it doesn’t touch the surface of the cake mixture).
Same temperature (140 on the lowest shelf in a conventional oven or 115 on any shelf in a fan oven).
I would have a peek at 1 hour to see how it’s looking and then check every 15 to 20 minutes, but I think it will take 2 hours to bake.
