2 questions please:
I have been unable to find “mixed spice” in any of the supermarkets nearby. You have a recipe for mixed spice in one of your responses. So if I use your recipe, and Delia‘s Christmas cakes call for cinnamon for example, do I add that additional cinnamon?
Is there a substitute for suet? We don’t have butchers in my area nor do any of the supermarket sell it or have even heard of it. I know what it is as I grew up British.
Thank you so much. I’m getting ready to make both Creole Christmas cake and Delia‘s traditional Christmas cake this week.

If the recipe says add mixed spice and also cinnamon then yes you should add the additional cinnamon.
Instead of suet you can freeze and grate beef tallow or butter and then toss it in the flour, in place of the suet.
