

There's plenty to celebrate this month with bank holidays, the Coronation AND Eurovision!
Instead of our normal three course menu for 2, Lindsey has chosen recipes for the perfect buffet to satisfy everyone. Mini Yorkshire Puddings with Rare Beef, Curried Chicken Salad using cooked chicken to cut down on time. Brown Rice Salad is served cold, and Caramelised Onion Tartlets with Goats' Cheese can be prepared in advance (see Lindsey's note at the bottom of the recipe page); For fish lovers, a stunning Salmon Coulibiac can be made well in advance and finally Pistachio Sables - the perfect nibble to serve with drinks, the recipe makes about 30 - but we guarantee you will have to try one or two yourself!
Sweet choices are Delia's Lemon Roulade recipe which makes 2 roulades and serves 12-16 people, an easy Strawberry and Vanilla Pavlova and Old-fashioned Rhubarb Trifle
