Yes, this is the one where the nation ran out of liquid glucose, because of (it has to be admitted) the power of television.
It has been much copied over the years, but the original is still the best and I'm still grateful to my friend, and chef, Derek Fuller, who gave me the recipe.
Liquid Glucose is now available through most large supermarkets under the Dr Oetker brand in the baking section.

Re Truffle Torte (Delia’s Christmas recipe) Am making this for the first time. Due to nut allergies, I can’t use amaretti biscuits, would an oat biscuit work okay instead or will it go ‘soggy’ (I’m making it 2 days in advance of eating)? Many thanks.
Answered by Lindsey: Hello, I might be soft, but we haven’t tested it. Perhaps you could combine the oat biscuits with some grape-nuts, or you could use gingernuts at they are crunchy. Best wishes Lindsey
I live in Turkey & cannot get liquid glucose or Amber Nectar as suggested for America?? I have seen liquid Stevia, would that work?

Good morning. I am going to make the Chocolate Truffle Torte. Would it make a huge difference if I used Callabaut 54% cocoa solids dark chocolate instead of 70-75% dark chocolate cocoa solids. Many Thanks Sally

You will also need a 9 inch (23 cm) cake tin, lined with a circle of baking parchment and the base and sides lightly brushedwith groundnut oil.
