Avocado with Prawns Two Ways

This recipe is from Delia's How to Cheat at Cooking.

There are some quite ordinary yet lovely things that end up being overlooked because they are not fashionable, and this is one of them - avocado with prawns.

We've made it with Tesco Finest prawn cocktail here, but any similar one is fine.

Method

First, empty the prawn cocktail into a bowl, add some seasoning and a good pinch of cayenne.

Now add the juice of half the lime along with the ketchup, and stir it all together. Pile the mixture into the halved avocado. 

Alternatively, cut the avocado into chunks and pile this, along with the prawn cocktail, on top of some shredded lettuce in 2 glasses to serve.  Either way, add a sprinkling of cayenne, the other half of the lime cut into quarters to squeeze over and serve with some of the lovely Irish bread alongside.

Ingredients

Shredded lettuce (if using)
Traditional Irish wheaten loaf (Tesco), cut into thinnish slices and buttered
