I have to questions-
When you say the butter and sugar should be fluffy-? how can you tell what is fluffy? 3 minutes , 5 minutes
Secondly, oven temperature for the 6” Christmas cake - with a fan oven, still 140 degrees or less?

Fluffy means that the mixture will be soft, evenly mixed and aerated. It will be paler in colour. You can do it with a wooden spoon in a roomy bowl with a vagarous beating (about 3 minutes) or using an electric hand mixer will make light work of it.
As a general rule if your using a fan setting you should reduce conventional oven temperatures by 20 degrees, but as the classic Christmas cake is baked on the bottom shelf of a conventional oven, I suggest 115C when using a fan setting (any shelf). Either way – remember to protect it around the outside with several layers of brown paper and over that top with the double parchment paper (with a small hole in it, and not touching the surface of the cake).
