Mustard and mince pies..

I was looking at one of the recipes for the Christmas and it asks for made-up mustard. I can't find a recipe anywhere in the book for this type of mustard, help!

Also I wanted to ask, what type of pastry is used for the traditional mince pies?

If you think about it, mustard is the one and only home-grown English spice, and for my money it’s the best. I admit this is a personal thing, I like the ferocious kick of English mustard that makes its presence felt when only very little is used
