My steam pudding did not set and I steamed for 12 hours, double what the recipe called for. I think too much guiness. Recipe called for a small bottle, the smallest in Australia was 375ml. Ingredients 200g b/crumbs, 200g sug, 200g raisins, 200g sultanas, 150g currants, 150g suet, 125g peel, 75g flour, 3 eggs, 1 grated apple, 75 g almonds, 1 lemon rind and juice, 40ml whiskey and spices, which made 2 x 1ltr puddings approx. Do you know what these quantities would require liquid wise? Thanks. K.

Your recipe doesn’t seem that far away from the proportions of Delia’s recipe. I think a small bottle of Guinness is 330ml! We only steam for 8 hours and I never look at it until it’s cold so I think perhaps your will firm up as it cools or you left out (or under weighed) an ingredient or perhaps there isn’t enough egg? We use 2 large eggs per 1 L pudding basin.
