I have come across a few recipes that suggest cuting almonds into slivers. (Homemade mincemeat & Florentines)
Do you have any suggestions in how to best do this.
I am finding that they shatter into uneven slices, and break

Hello,
Generally, I slice them one by one on a chopping board using a small sharp knife.
If they shatter on every slice I split them in half and then sliver them.
But if they are being cooked in a recipe and are particularly troublesome you can soak them in warm water for 10 - 20 minutes which will soften them and make them easier to cut neatly but they do lose their crunch, so this method isn’t suitable for every recipe.
You can crisp them up in the oven if you need to revive the crunch!
