This month we have four recipes instead of the usual three.
For a warming drink on arrival, serve your guests Hot Spiced Cider with Buttered Apples, guaranteed to get everyone in the Christmas spirit
Main course is Salmon Coulibiac. It might look difficult, but it's all made well in advance, then wrapped and chilled in the fridge until you are ready to cook. Serve with Sauteed Caramelised Fennel.
Finally a dessert that is a simple assembly job, Vanilla Bean Ice Cream with Raisins Soaked in Pedro Ximenez Sherry. BUT you do need to soak the raisins in the sherry for a week so they get plump and juicy, so make sure you leave yourself enough time.
