I'm making mincemeat. Does it matter that packet suet contains a lot of flour to stop the suet clumping? I have sieved it and the powder weighed more than 50g in a 240g packet. I am concerned about the flour (15% according to the label) will cause the mincemeat to go off. I realise that some flour will stick to the suet no matter what I do. Fresh suet appears to be nonexistent. Thank you.

I’m assuming your using Atora. We’ve been using it straight from the packet for as long as we’ve been cooking and never worried about the composition.
I expect the 50g isn’t pure flour but a mixture of wheat flour and powdery suet but even if it isn’t I don’t think that it’s going to have any negative affect on your mincemeat.
Please don’t worry, I’m sure your mincemeat will be fine.
