Pear and almond cake calls for self-raising flour which is not available here. I have tried many times to make it using plain flour and adding various amounts of bicarb etc, but nothing seems to work well, Can you help?

I am making Delia's Classic Christmas cake again this year. I will be soaking the dried fruit in alcohol the night before I will bake the cake, but I do not intend to feed it once it's cooked. How long in advance should I make it, with this in mind?
