Very crumbly apricot slices
Hi Lindsey
Delia's recipe for Apricot Oat Slices popped up in the latest newsletter and as I had all the ingredients to hand I gave them a go. Unfortunately they came out just as they went in all crumbly. I used dried apricots and everything else exactly as the recipe. I mixed the 150g of butter well with the dried mixture and patted down firmly for the base and top. It certainly wasn't over moist so I wasn't overly surprised with the cooked result. As the butter is the only liquid ingredient can you confirm quantity is correct. If it is, please advise what I might do to achieve a better result. Thanks, Margaret.
Hello Margaret,
Yes the butter quantity is correct.
They can be a bit crumbly. To make sure it holds together you need to be press the uncooked mixture down very firmly.
Also it helps if the chopped apricots are the soft eating variety so that they feel a bit squidgy when they are chopped.
Lastly, when the weather is warm it can help to leave them longer before you cut them so the butter has time to set and helps hold them together.
Best wishes
Lindsey
Lindsey, thanks for that. I did press the uncooked mixture down firmly. In any one pack of apricots there seem to be both nice squidgy ones and very dry chewy ones. I'd really like the recipe to work for me so perhaps I might try fresh apricots in future as Delia reckoned fresh plums worked well.
