Cooking a bigger turkey
Hi I always follow delias recipe for roast turkey on Xmas day. This year I’ve got a bigger turkey at 7.470kg.
It will have 1.3kg of stuffing inside, Delias recipe of course.
I’m really struggling to do oven timings could you help me please? I have a fan oven.

Freezing and reheating sticky toffee pudings
hi just made the little sticky toffee puddings. Look great very light. I have always made these on the day but need to freeze them.. I see that this is OK. But there is little advice on how to reheat and whether it affects them at all? Please can you advise on both these. It would be a real shame if they are not as good our ruined in reheat. Also the sauce..the soft brown sugar is this light or dark please ?

I hope to make Beef en route for Christmas Day. You say it can be kept in fridge for several days beforehand
But I shall be using commercial puff pastry. Will that keep and no dry up?

Sticky Toffee Tray Bake
For the little sticky toffee puddings can I make this in a large tray or is the mixture too soft and has to be done in the individual moulds?

Slow cooker red cabbage
Would Delia use a slow-cooker today to make her wonderful Xmas Red Cabbage recipe,which I have been making for donkeys years.
Making the nut roast ahead
I make the macadamia nut roast every Christmas. Can it be made in advance (eg 23rd) and heated on 25th? Or should I bake it and freeze it? I’m at work Christmas Day and would prefer to prep everything before. Thanks
