Alex Mackay's In Season Recipes
Autumn has arrived and as we welcome the harvest of juicy plums, soft sweet figs and seasonal cauliflower Alex has cooked up three autumnal dishes using the versatile Italian hard cheese, Grana Padano.
Cauliflower has burst back into bloom and this forgotten vegetable is fashionable once again. Alex serves it caramelised with a Grana Padano crust accompanied with a cauliflower rib salad with orange. The beauty of this dish is everything can be cut and ready to cook hours before you start. Whether you grow your own or buy from greengrocers or local markets, you'll find British plums are now coming into season so serve them in this autumnal duck breast salad. Alex shares his way of cooking duck to perfection in his recipe for Roast Duck Breast with Sweet-Sour Plum & Grana Padano Chutney, Chicory, Grana Padano and Plum Salad. The meat is rich and loves the piquancy of plums, both in the chutney and the salad. The chutney has a secret ingredient in Grana Padano cheese, using also the rind to give it extra depth.
For a not too sweet dessert Alex's Golden, Glazed Gorgeous Fig, Walnut & Honey Tart on Grana Padano Pastry will delight. This dessert features Grana Padano added both in the pastry and in the filling, so little slices could become a cheese course with aged Grana Padano crumbled on top. The tarts can be made up to a day in advance and warmed through or served at kitchen temperature.
