Our menu for July begins with an easy soup that you can make well in advance.
Watercress and Buttermilk Vichyssoise takes only 10-15 minutes to cook and could be served warm as well as chilled - therefore accomodating the weather conditions in the summer! Watercress is in season this month so buy a bag next time you are shopping, and for more recipes using fresh watercress, try Watercress and Lancashire Cheese Bread or Watercress and Caper Mash. Main course is Chicken Salad with Tarragon and Grapes, a bit of an assembly job, it's made using a cooked chicken (watch Delia's Best Roast Chicken video here), and a super quick dressing of mayonnaise, cream, tarragon and spring onions. Finally a recipe that really is foolproof, even if it all goes wrong when you make it. Eton Mess is made with broken meringues so they don't need to be perfect - you just need to remember to make them the day before.
