Invaluable for tomato sauce
You won’t find a house in Italy without a food mill, and at this time of year it comes into its own during the tomato season. Every Italian I know turns a mountain of red ripe plum tomatoes into a sauce to last through the winter months. Every house becomes its own bottling factory for that taste of summer in the midst of winter.
The tomatoes are peeled, chopped and reduced down, and then passed through the food mill which removes all the seeds and any leftover peel, resulting in a smooth deep red sauce which is then put into bottles or jars with a leaf or two of basil, and sterilised.
So if you find you have a glut of tomatoes now is the time to buy a food mill. It is invaluable for tomato sauces but can also be used in lots of other ways: to make mashed potato if you are doing a quantity, or for any pureed vegetables. You cannot get the same effect in a food processor.
Now I have chosen this Oxo Food Mill mainly because it has a particularly beautiful design, and comes from a good brand so I know it will be sturdy. But there are many others slightly cheaper on the market. The things to look out for are: a stainless steel inner to accommodate hot foods; three legs to hold the mill steady when placed on a bowl or pan; 3 discs (fine, medium and coarse); and a comfortable cranking knob on the handle. You will even find a video of how to use it on the Amazon website. Pushing the bar down into place needs a little bit of practice - you press it down aligning it with the two hooks and it locks in place (you don’t need to use the button release device except for removing the bar after use).
So turn your house into a bottling factory!
