Perard Fish Soup
The best quality fish soup on the market
It is strange that I immediately think of summer with the prospect of eating soup. But this is no ordinary soup – it is the best fish soup you can eat unless you are basking in the south of France. And because I associate it with Provence I think of summer.
However Perard soup does not come from this region, but from Le Touquet in the north of France. Mr Perard, himself, claims the right to have invented fish soup, and his is renowned as the best quality soup you can buy. He first started making it in his restaurant and so many customers clamoured to take it home that he began to sell it. He started to produce it commercially in sterilised glass jars in 1994 and it was awarded the Label Rouge (a sign of quality) in 2009.
The Label Rouge signifies that it contains more than 40% fresh fish content; it has at least 5 different types of fish and it is perfumed with pure saffron threads. It is made of 100% natural ingredients with no preservatives, artificial flavouring or colouring. In fact you can see a video of how it is made on YouTube!
You simply heat it gently and top it with toasted slices of baguette spread with rouille and some grated Emmental cheese. It is a shame that Waitrose do not sell the Perard rouille, although they do sell another brand. On the jar, Perard also suggest you make a quick bouillabaisse by first cooking different pieces of fish, mussels, prawns etc, dividing them between bowls, pouring the hot soup over and add some rouille.
However you choose to eat it you will be reminded of summer.
