I made Delia's classic Christmas cake last week. How much brandy should I use each time I feed the cake (top and bottom on alternate weeks). I don't want to make it wet but want to give it enough! Many thanks.

Hi I used the recipe for PORK CHOPS BAKED WITH WILD MUSHROOMS AND CREME FRAICHE I followed the recipe but did use half fat Creme fraiche. It all separated out and looked awful was this because I used half fat Creme fraiche and is their any way to rescue this? Thanks

I have recently had to buy a new electric fan oven, and everything seems to be coming out overcooked, especially my baking. My scones that I've made hundreds of times over the years, are coming out really dry, and I made Delia's Victoria Sponge cake the other day, that is also one of my go to recipes, and that came out so dry that even masses of jam and whipped cream didn't help...
Hi . I am about to start my Christmas cake making marathon. I use Delis Christmas book Whiskey Dundee cake recipe but I make the cakes using one and a half mix cake as we like a deeper cake. I have to make twelve of them for various friends and relatives. I have experienced one slight problem in previous years that the cake is slightly dry. I was wondering if I put an extra egg in the mixture would this solve the problem. Obviously I cannot afford to experiment and risk wasting expensive ingredients. Your advise would be welcome
