I am making pear and ginger chutney, I cannot get it to go syrupy despite simmering for ages now. The pears are very soft. Any tips? Will it set as it cools?

For years with the exception of two years ago I follow Delia's recipe when making my Christmas cake but every year I get the same result! The cake tastes great but crumbles when I cut it ! I always soak the fruit, I do everything the recipe tells me to do! Two years ago I tried an alternative recipe but had the same result! It's time to think of this year's cake.....I would so like it not to be crumbly!!!! Please help!
