I have just got a new electric fan oven, having been used to gas, and find I am having difficulty cooking small joints of meat. They do not brown well.
Would I be better to use top and bottom heat, or circotherm? And at what temperature?
Also, can I continue to use my earthenware cook dishes, or would I be advised to get new metal ones?
Dear Lindsey, I have made the delicious traditional orange
marmalade with preserving sugar, when I see the recipes
for the dark chunky marmalade and the suntina marmalade
I have to use granulated sugar, can you tell me why Delia
isn't using the same sugar in these recipes?
