Is Fondant icing sugar just simply icing sugar or is there a specific type of icing sugar to be used to make fondant icing
Would like to buy Delia smith cook book online but there is so many maybe you could suggest which one as I’m interested in cakes pies and fish cakes whic I have seen on here thank you
Dark Chunky Marmalade. Was I supposed to use the remaining poaching liquid for Stage 2? I used the one pint for the pulp but I discarded the rest thinking I just added the pulp, sugar and peel to the preserving pan for Stage 2. I now have a dark sticky substance after three hours of cooking. I'm thinking of heating it up again and straining it and simply finish candying the peel. Any suggestions to salvage this would be appreciated!

Hello, Lindsey and Delia. Best wishes for a happy, healthy 2021.
We were hoping you might consider having an online questionnaire about expanding the cookware portion of Delia's cookware line, such as larger frying pans and sauce pans. We certainly are quite happy with our Deep Oven Roasting Pan. Your recipe for lemon tarragon quick-roast chicken is excellent. As well, the Christmas pudding was wonderful, and Etty's sausage rolls were a hit as well as the fruit cake.
We are hoping a survey would indicate interest in other fry pans and sauce pans. Thank you.
Yikes! Utter disaster with Chunky Marmalade recipe which I followed to the letter but has turned out so horribly bitter it is completely inedible. What can have gone wrong?
