

Hi Lindsey, I am fearful of using egg, for health reasons, in the Almond icing recipe. . Do you think it will it be cooked enough in the 10 mins in the pan over the simmering water or will it still be fairly raw? Is there any alternative to egg that I can use?

PS I have made Delia's Classic Christmas cake and boy did it smell good when it was baking!!!!!

I think the egg cooks out quite well but you could use a bought natural marzipan if you’re worried about it.
