Making marzipan with egg.

I know the temperature needs to be above 70 degrees to kill salmonella and e,coli. Does this method cook the egg at 70 Degrees? How long should I cook it for?

If you use British Lion Eggs the NHS advice says “Because of improved food safety controls in recent years, infants, children, pregnant women and elderly people can now safely eat raw or lightly cooked hen eggs, or foods containing them, that are produced under the British Lion Code of Practice.”
If you are still concerned you could make marzipan with pasteurised liquid egg or follow a recipe without egg.
