

I am using Delia's recipe for my daughter's wedding cake. She is getting married in Italy in August and the weather is likely to be very warm.
I plan to make the cake at home in the UK and assemble it in Italy. Please can you tell me whether it will be safe to put on the marzipan and icing at home in the UK before we leave?
It is being taken to Italy in a car, a journey that will take four days.
I have large airtight boxes to store it in.
Your advice would be much appreciated.

Hello Elena,
I presume you are using fondant icing.
They should be fine as long as it you don’t let the cakes get too hot, which may make the icing melt. If your driving there in an air conditioned car & make sure that whenever you stop during the day that you park in a shady spot.
Polystyrene cool boxes could be helpful – but bulky!
As the journey takes 4 days, I think, time and conditions permitting, doing the marzipan before you go and then icing and finishing the cakes when you arrive may be less worrying.
