I have just made Delia's vegetarian goulash from the vegetarian collection cookbook (page 163). I followed the recipe to the letter (including hunting down pimenton) but the vegetables, particularly the potatoes and carrots, were rock hard. I had to give them extra time in the oven, then on top of the stove and finally several minutes in the microwave.
Are you able to help me so that I can make this again? I have a lot of pimenton to use.
