Using juicy fruit in the pudding!

I am about to do the xmas pud-I bought whitworths juicy sultanas and raisins but now realise they have been plumped up with water a bit-will this affect the weight of the ingredients and also the amount of liquid in the recipe?

A good question but as I don’t know how much water they add to the fruit I don’t really know hoe to work it out precisely. But as I generally add more stout to my pudding, I’m going to suggest what I’d do based on what I know and my gut instinct. I would use 140g of the juicy raisins and 140g of the juicy sultanas and the same liquid as the recipe – 40ml rum, 75ml barley wine and 75ml stout.
