

Hello Lindsey,
I am due to make my Christmas pudding this weekend.
I have bought individual plastic basins with lids.
Do I steam them with the lids on or should I cover them with baking parchment and foil as Delia suggests?
Also could you advise how long I should steam them for IN AN AGA in the SIMMERING OVEN?

Hello,
We would still cover them with parchment and foil and then use the lids to cover them before storing them away.
Make sure you do a really good pleat in the top of the covers. Sometimes plastic molds change shape as the mixture expands and if they are covered too tightly you can end up with some odd shaped puddings!
I’m sorry I can’t advise you on steaming in an Aga or simmering oven because we haven’t tested it.
