Using frozen or dried cranberries in Cranberry Muffins
Asked on 27 Oct 2018 by Gill
When making Spiced Cranberry Muffins with Frosted Cranberries, could frozen or dried cranberries be used in the mixture, or must they be fresh?

Hello,
Yes you can use frozen cranberries. They will work better if they are still frozen because defrosted berries can be very mushy.
If you use dried, I would simmer them in some orange juice for a couple of minutes then leave them to soak for an hour (or more) before using them. Then I would drain the cranberries and use the juices as part of the overall measure of liquid in the recipe.
