I have made the delicious Chicken Basque several times using skinless, boneless chicken thighs and used the same temperature and cooking time. If I used skinless, boneless chicken breasts how ling should I cook it for and at what temperature?

Did you mean chicken breasts without skin?
The cooking time will be the same as that’s how long the rice needs to cook.
I would just seal the chicken over a medium heat so that don’t dry out too much.
