

Hello Lindsey, Two of Delia's soup recipes using beans, call for dried beans and gives the dried weight. Could you tell me how to convert these dried weights into the weights associated with canned beans - which is what I have.
The particular recipes are the Tuscan White Bean soup using cannellini beans and the Black Bean soup with black bean salsa.
Is there a general weight conversion one could use for all beans from dried to canned. thanks, Cherry

Hello Cherry,
All dried beans absorb different amounts of liquid during soaking and cooking but roughly I would say the increase by three times the weight.
So, I would use 675g of drained, rinsed cooked white beans for the Tuscan and 750g of drained, rinsed black beans for the Black Bean Soup and Salsa.
